Q&A with Andrew McGie


Director of Restaurants & Bars, Andrew McGie has worked across International borders, in some of the most renowned kitchens in the luxury industry. From catering to Richard Branson’s guests on Necker Island to Head Chef at the 7* Emirates Palace in Abu Dhabi, Andrew has shares a little more about himself.

How many years have you worked in the food industry?

I have worked in Hospitality since I was 15, so 22 years - I can't imagine doing anything else.

What inspired you to join the food industry? Cooking and socialising was a very big part of my childhood, it bought everyone together and the offering was always so varied and interesting depending who we were with or where we were. Everyone loves food and good food makes people happy.

How would you describe your food style?

I would say my style focuses on using the best available ingredients that are simply cooked or prepared, you also can't forget tradition, there is a reason recipes have been passed down through generations.

What is your favourite dish & why? Having lived in Portugal for 2.5 years, I love fresh seafood simply grilled over charcoal and served with a simple salad.

What is your favourite drink & why? For me this changes depending on the weather or where I am, for some reason drinking an Aperol spritz in Venice, glass of St Emillion in Paris or a Mojito in Cuba does not taste the same elsewhere.

What do you do for fun? I enjoy travelling with my family, surfing and trying new experiences, you only live once, make it count.
